was born from a desire to honor that moment.

This is not a typical dinner. An invitation to slow down, to be present, to celebrate meaning through food and ritual.

You host, I cook.
Together, we shape a Friday night that’s both meaningful and memorable.

Experience Structure.

shabbat.exp is not a standard dinner… it’s a culinary experience designed to elevate one of the most meaningful nights of the week.

  • Start at €2800.

    This covers the creative direction, preparation, and execution of a soulful Shabbat dinner - all delivered in your space and fully tailored to your context, season, and guests.

    Included in the fee:

    Curated menu creation, designed to reflect your taste, the season, and the location
    Premium ingredient sourcing, with a focus on freshness, quality, and trusted local producers
    Full kitchen preparation and on-site private chef service
    Coordination with the host to align meal timing with the natural rhythm of Shabbat (candles, challah, wine, blessings)
    Support with flow, pacing, and overall atmosphere of the evening
    Discreet kitchen reset

  • Start at €85 per guest.

    This covers all food and ingredient costs for the experience.

    Each menu is designed using high-quality, seasonal produce, often sourced locally or from specialty purveyors. The per-person rate ensures every guest is served a thoughtful, generous meal — prepared fresh on-site and aligned with the standards of the experience.

    Included in the per guest rate:
    – All ingredients and provisions
    – Menu planning based on guest count and dietary needs
    – Fresh on-site preparation and final cooking
    – Thoughtful Shared-style service
    – Adjustments for dietary restrictions (if required)

    This rate ensures flexibility in sourcing and the ability to maintain a premium ingredient standard across different locations.

    Please note: Requests for premium ingredients — such as wagyu, or other luxury items. will increase the per-head rate. A custom quote will be provided based on your preferences.

  • To ensure the smooth delivery of the experience and maintain a high level of care, additional support is required based on guest count:

    – For groups of 6 guests or more, a cleaner (minimum 6 hours) will be required to assist with space management, dishwashing, and kitchen reset.
    – For groups of 12 guests or more, a waitress or service staff (minimum 4 hours) will be required to ensure the flow, plating, and guest experience are properly supported.

    These services can be arranged through our network or integrated with your existing villa team.

  • Available Upon Request.

    Challah-Making Session (Optional add-on before the dinner — traditionally led by women, but open to all. A beautiful way to connect before the evening begins.)

    Wine or Kiddush pairing coordination
    Floral design and table styling
    Live music (traditional, ambient, or instrumental)
    Photographer or filmmaker
    Ritual object rentals (candlesticks, challah board, wine cups)
    Guided meditation or moment of presence
    Sommelier service

    All add-ons are quoted separately and tailored to your location, group size, and specific needs.

Who’s Behind Shabbat.exp?

My name is Clément Marchais, I’m a French-Australian-Vietnamese chef with a background shaped by Michelin-starred kitchens, global private clients, and a lifelong love for soulful food and human connection.

I’m not Jewish, but over the years I’ve worked closely with Jewish families, catering, celebrated countless Shabbats in private homes, and come to deeply appreciate the meaning behind the ritual : the pause, the invitation to slow down and connect.

shabbat.exp was born from that appreciation.
Not to replicate tradition perfectly, but to hold space for it; through food, flow, and atmosphere.
To honor what matters: presence, intention, and care around the table.

I’m here to support the hosts, not replace them.
