COAL.EXP is a luxury private dining experience defined by fire, built around the beauty and simplicity of the traditional Japanese hibachi grill.
Led by a chef Clement Marchais trained at Michelin-starred restaurants including Martín Berasategui (Spain) and Quay (Sydney), and trusted by billionaires, Hollywood icons, and global artists. COAL.EXP delivers fire-led dining rooted in authenticity, exceptional ingredients, and quiet precision.
It follows an omakase format, where each dish is curated in the moment.
There’s no fixed menu, just a carefully considered progression, shaped by the season, the setting, and what’s best on the day.

What To Expect.
You’ll experience an 8 to 12-course tasting menu, fully curated by the chef and cooked live over hibachi using Binchotan and local Ibizan charcoal and olive wood. Each dish is guided by fire, crafted with seasonal ingredients, and served in rhythm. From wagyu to caviar, everything is prepared on-site and tailored to your space, with the option to elevate the experience through wine pairings, service, and styling.

Each COAL.EXP dinner is custom-built, from ingredient selection to on-site execution.

A kitchen assistant/cleaner is always included to ensure a seamless flow and to maintain your space.
This role is billed at €60/hour, with a 6-hour minimum.For groups of 6 guests or more, a front-of-house staff memberor/and chef assitant is added to elevate the service experience.
Support staff are billed from €60/hour per person, based on the needs and duration of the event. -
Wine pairing, sommelier, table styling, sound design, and photography are available by request and quoted separately.
