What it is

COAL.EXP is a private omakase-style dining experience built around a traditional Japanese charcoal grill, Ibizan olive wood, and a progression of courses shaped entirely by what is worth eating that week.

No fixed menu. No formula. Every dish touched by fire. Every decision begins with the ingredient.

You arrive. You sit close to the grill. The evening takes care of itself.

The experience

It begins cold and precise.

Something raw. A crudo, a tartare, a single thing that asks you to pay attention.

The first scent of charcoal reaches the table before the first course does.

Then fire enters the room.

A scallop hits the grill and the room shifts. A langoustine, split and coal-kissed, follows minutes later. Then something deeper — dry-aged Galician beef, or Wagyu, rested and sliced at the grill in front of you.

Each course arrives when it is ready. Not before.

By the final sweet, the room is unhurried. The fire has done its work.

Sourcing

Sourcing is relationship-led.

The menu is shaped by trusted fishermen, growers, butchers, and producers — chosen for what they can offer at that moment. Some weeks it is Ibiza red prawns and Formentera squid. Others, bluefin tuna from Cádiz, white asparagus from Navarra, dry-aged Galician beef, or caviar selected specifically for the evening.

Nothing is added for spectacle. Everything has to earn its place.

The setup

COAL.EXP comes to you.

The grill, charcoal, equipment, and preparation arrive with the chef. Your villa, your terrace, your kitchen. The villa stays yours. We bring the rest.

Entirely self-contained. Discreet. Complete.

Selected hardwood charcoal, Ibizan olive wood, and Japanese grilling techniques are used according to the space, menu, and setting of each booking.

Wine pairing, sommelier, additional service, and table styling available — tailored to each evening.

Pricing

COAL.EXP is a complete private experience.

The experience fee covers the full creation and execution of the evening — menu development, sourcing, preparation, transport, grill setup, live cooking, service flow, and breakdown.
